Viton(fleurocarbon) seals are mainly for high temperature applications.

Urethane is preferred for higher pressures.

Nitrile (buna) kind of splits the difference and is the general purpose choice for most applications.

The higher the durometer the harder the compound it is made from.

There are many variations of these but this is a general guide.

I work in manufacturing and deal with all of these (and more) on a constant basis and this is excellent general advice.
 
In my particular instance, the Viton is holding up much better so far.It's been over a year without a failure and I shoot this particular gun several times a week. I'll shoot the Viton until they fail however that may take a long time since my purchase last month of an Air Arms S500. Much simpler design than the dated HW100 I have been shooting for a decade now.
