Are you sure that Southern version didn't originally say, to some bacon drippings in a skillet

Grand Ma's recipe used lard .But I prefer olive oil .Been cooking this way for 40 years and it is hard to beat .Bacon dripping or corn oil would be fine .Modify to your taste .

Bacon drippin' in a seasoned cast iron skillet! Lard or plain Crisco works well for better flavor than oils give. Just can't use them all the time. Olive oil with a few pats of butter is tasty too. The Amish & Shakers use equal amounts of bacon drippin' & butter for a truly savory flavor with veggies. Would be great to cook wild game in.
