    I like that wild game cookbook! When the recipe starts with “brown in bacon drippings” you know it’s gonna be good.

    Are you sure that Southern version didn’t originally say,  to some bacon drippings in a skillet

    Grand Ma’s recipe used lard .But I prefer  olive oil .Been cooking this way for 40 years and it is hard to beat .Bacon dripping or corn oil would be fine .Modify to your taste .

    Bacon drippin’ in a seasoned cast iron skillet! Lard or plain Crisco works well for better flavor than oils give. Just can’t use them all the time. Olive oil with a few pats of butter is tasty too. The Amish & Shakers use equal amounts of bacon drippin’ & butter for a truly savory flavor with veggies. Would be great to cook wild game in.
