A couple of years ago I was in the same place. I needed something portable yet sturdy. Nothing janky. Durable and easy to deploy. So after hours and hours of searching like yourself and estimating material cost and my time I decided to go with one of these.

Folds up easily, deploys in seconds, takes up no room in my car. i saved plenty of cash and gained a lot of hours shooting that I would have spent building.

And, and I have used it as an additional work bench and serving table at picnics.

MTM makes one. About 60 bucks. I use a utility table from Lowes. 37 bucks works great for me and gets used for a variety of other things.

it's not a table, per-se, but a portable tripod...I use one and it works very well.

Cheap to make. Works very well. Just need top a collapsible saw horse and a few fasteners. 

Here is what I use in the back yard and in the field. Not DIY but counting parts and work into the price this was cheap.

Like the 3 legs verses 4 and in the field can shoot 360 degrees.

After considering time and materials, I wound up buying the MTM bench for sixty bucks. Very light, very portable, very steady combined with a Caldwell Rock Jr.

Hyskore Ten Ring benches are excellent. All metal, 3 adjustable legs, very sturdy but easy to move. They were selling for just over $100 a year or so back.
