Apparently goose is really good eating it’s dark meat. I myself am not a fan of dark meat.
They are a big target. Shouldn’t be hard to miss. Crow

The secret is do not cook them like a Turkey, cut the bird in half to eliminate the gut cavity. If you bake a whole bird the cavity will dry the meat out too much. A goose does have a "wild" flavor but if cooked correctly will be moist and delicious. Take the halves and lay flat in a Pyrex dish with a thin layer of Canola Oil and Butter, thick slices of a white sweet onion and seasoning. Cover the entire top half of the bird with bacon strips, cover the dish with foil and place in a pre-heated oven ( 250/275 degrees ) on the middle rack with a pan of water on the bottom rack. Bake until an internal temperature of 170 degrees fahrenheit is reached, uncover and continue to bake until a light golden brown color. Serve this on a bed of hot Dirty Rice, man this is gooooood. I was born and raised in Southeast Texas and have eaten several truck loads of duck and geese.

From the reciepe it looks like your trying to mask the goose taste!! I tried them once, thought theyvwere greasy, nasty tasting, but to each his own....
