We call that "redneck" or sometimes "Indian" style. It was taught to me by a Native American friend I've been fishing with since we were kids. I use a different method now, I got tired of the smell of the ruptured innards! 

My dad saw me do that once and he got really mad. He loved to rabbit hunt and we loved to eat them. He thought it disrespectful to rabbit as food. A rabbit is so easy to clean by just grabbing in the middle of the back and pulling the hide opposite directions. Then slit the underside, dump the innards and then take off the feet at the joints to avoid dulling the knife. The head is last. Very easy and quick. Nice thing about rabbits, different from squirrels is that rabbit hair, if you get any on t he meat washes off very easily. 

Squirrels are dressed differently and many people have difficulty with squirrels. There is a process for them as well to make it go quickly, hairless, and easily. Some folks try to do it as I described with rabbits and end up with more hair on the beast than they started with.

Rabbit and squirrel are great to eat. Fried rabbit and fried then pressure cooked squirrel.

Actually, when it comes to cotton tails, it is even easier than the video would indicate. All you do is bend them backwards, grape all four legs, and a quick whip action, and everything just flies out. 

When I clean a cottontail I never even see the guts. I peel off the hide like a sock, cut the four legs off, and filet the two back straps off.
