Ball Head or Gimbal Head?

If weight and size isn't an issue, gimble all the way. I have Arca B1 ball and a cheap gimble from China. I use the gimble. The gun stays level at all times and I use a counter weight on the front of the gun. It balances perfectly on the gimble head. Almost zero force needed to move it anywhere and it stays put in any position.

Now if you want something for field use it probably will be too big and heavy.

With using a gimbal head, you can adjust for cant by adjusting one of the tripod legs or by mounting a leveling head on the base of the tripod and have the gimbal mounted on the leveling head. This is one advantage of the ballhead as you can adjust for cant and angle of shooting at the same time. The advantage of the leveling head is once you adjust for cant, it stays locked in place unless you move the tripod to a different position on uneven ground.

If one looks at the reasons/uses for a Gimbal head in photography, the same actually applies to air rifle use.

A gimbal allows one to balance the load, get the advantages of a tripod, and yet allows instantaneous freedom of motion while offering that support. The gimbal is for action shooting where pointing fast is important. It is second only to shooting hand held for fast freedom of motion.

It is my feeling that a gimbal therefore has no use for normal paper target shooting, where fast smooth pointing is less important. It would be useful for fast action oriented range shooting like silhouette, etc. I could imagine it for pest control, but less useful for more standard "one shot" hunting.

For bench type shooting, a ballhead seems far more appropriate.
