ANY GOOD IGUANA RECIPES???

I've only prepared 2 iguanas to date. Taste was good, but looking for ANY suggestions



I know… Kind of an eclectic meal. I cooked the iguana with skin on and it was soaking in sauce for a few hours. Wrapped in tinfoil and put on BBQ. Then, after cooked, put directly on BBQ. Then, skinned and served with a light BBQ gravy I mixed. It was very good, but hope to hear how some here enjoy it.

Maybe Waste Management has one.
Most of the people I talk to in my complex in PR DO NOT like to eat them. However, it is exported for consumption, some restaurants serve it, and some people here do eat it.

Thanks again. A buddy of mine in PR just gave me a few suggestions that I'll try……soaking in coke or milk…I've tried that on some of my BBQ preparations in the past..
