Which gauge to trust

I have used fx, wika and huma and all 3 were off from my sx scuba gauge on my cf tank which I trust the most so in my opinion none of the mini gauges are completely accurate. A test you can try is switching your reg gauge with your bottle gauge and see if they differ

My Omega compressors gauge is accurate. As Sonny said, the small gauges on these PCPs are often off. Some are accurate at lower pressure but off at higher pressure and vise versa. Some are just off all the time. Few are spot on.

I dont think you have damaged you guns as they are designed to handle more than what the specs say for safety reasons otherwise the gauges would need to be more accurate. I do agree with oldspook though.

I always trust the gauge on my fill whip. The gun gauges have been accurate but sometimes track slow.
