Started sharpening my own at about 12. I made this case when I was about 15. The knife to have then IMO was a Buck Stockman and Cadet. Skinned a lot of coon with a Cadet. And other fur bearers. Hang a coon with a gambrel tied to a tree. Skinned in minutes. Take the dog and hunt for another. A Stockman is pretty good dressing deer. Both great utility knives. Never needed a pretty knife for anything. I don’t shave with a knife. Not trying to stab bears.
Been using a Chicago Cutlery chef knife in the kitchen for 30 some years. I keep a few filet knives around for mostly walleye.
I keep a keen edge on my knives and can’t stand the sight of a blade with a sloppy edge done with a grinder or something weird. I told my wife many years ago not to mess with my chef knife. She tried to clean it and cut the sponge in half. Never again. Wife and our sons know to never put my kitchen knives in the sink or dishwasher.
No! You can’t borrow my knife!
These are some of my most used.
