I really like walnut wood, but to try different woods.
I tried to work also European cherry, less red than your American cherry, oak, black walnut , walnut ovangkol, zebran wood, natural laminated wood and with two colors, ziricote, chestnut wood, European Beech wood.
The national walnut however remains my favorite, it is the wood that you work better, just as weight and with fantastic veins. In fact, the most famous Italian weapons factories, such as the Italian Beretta and the Swedish Vo Vapen, use walnut for their most valuable stocks.
