My problem is skinning them cold and stiff. It takes a lot of force to pull the skin off and that makes it difficult to hold the tail with my boot....keeps slipping out from under.
I like this video which totally eliminates the gutting operation. You do lose a little meat but I've usually got 2 or 3 fox squirrels at 2 and a half pounds a piece so there isn't a shortage.
