So.. figure I have a 100cc 3000 psi high pressure air tank.. and a 20cc 1500-2000 psi regulated plenum.. about how many shots could I get at 20-25-30 ft pounds?

There are so many variables beyond what info you've provided that it is impossible to give a correct answer.

I'm just thinking roughly speaking, how many shots could you get per fill from a cylinder that size with a reasonable good tune. The regulator pressure and power I gave a variable for that reason.

Taking the midpoint of your ranges...100cc (6.1ci) reservoir, 3000psi fill, 1750psi regulator setpoint, 25fpe tune
Assuming an efficiency of 1.0fpe/ci as a minimum, you'd be looking at 21 shots per fill.
Tuned more efficiently with some sort of anti-bounce feature (SSG, SSS, bstaley, etc.), an efficiency closer to 1.5fpe/ci is achievable, in which case you can expect something closer to 32 shots.
My frame of reference is a .22 cal with a rifle-length barrel shooting pellets in the realm of 15 - 20gr. A short barrel (<16") and/or smaller caliber will reduce these estimates.

That's what I was looking for.. I guess one of the factors I left out is that I'd be using a 24" barrel.

I like efficiency and accuracy, getting 90-100 shots per fill from .177 fx dreamline tuned to shoot jsb 10.3 at 910fps. 35-40 shots from .30 fx bobcat shooting jsb 44.8 at 870fps. The regs are at 90 and 160 bar with stock tubes.
