Dont give up on shooting. You can absolutely shoot left handed but you'll have to relearn some of the habits. There are full size and bullpup guns that have 'side switchable' cocking levers. Some rear cocking and more and more forward cocking. Not sure which would work better for you. Read up here. 

I got 99% of my mobility back after my stroke, keep working forward!!!
 
If you can set your rifle up on a tripod or a small bench or table you should be good to go. Not that it will be easy at first but the body and mind are very resilient and will often change to suit your needs with a bit of werq. Especially in the case of strokes. Have a friend who had a stroke could not even walk at first. Eight months later he is walking fairly well, talking very well and can grasp some items with his once useless hand and arm. Huge improvement and more yet to be made. I expect him to be shooting again very soon.

Last year I fell and broke my back (5 vertebrae) and shattered my hip. 2 surgeries and 1 month in the hospital and 2 more months in a rehabilitation center where they got me where I could stand with a walker and finally go home. Horrific pain but I really wanted to get back outside and start shooting and that took another 2.5 months before I could go outside and even think about shooting. Before I mainly shot off a bench and had to modify a bunch of things to be able to get back in the chair and shoot. Now I can shoot 100-200 shots in a day and it is no doubt therapy to be motivated to improve the groups, sit in the chair, set up the gear and get it outside, get up to fill the rifle and change targets, pick up the squirrels (just kidding), etc. I cant tell you what you need to do to shoot with your left hand, but I can tell you that you sound motivated to shoot and get a new bullpup style rifle so stop talking abou it and do it!!\ A new toy is good motivation. I hope you get some technical advice here on how to shoot with your left hand, but want to tell you that if you dont, you can figure it out and even if you miss more than hit with your new gun, you will be doing yourself a favor by getting out there and starting to shoot and you will see improvement. Buy semiauto rifles such as the LCS SK19 and Huben K1. Only effort is to load the magazines and plug in a probe or quick connect to refill air. It's the only thing I can think of if I were to lose mobility because thats all I'd be comfortable shooting. Maybe a Steyr PRO-X if that's within your budget.

Just stay away from HATSAN semiautos and "NON" YONG HENG CHINESE compressors.
 
+1 on the pistol idea! I say focus on the pistol and put all the rifle shooters with 2 good arms to shame! (Myself included)

During my archery competition years I was severely schooled by a one armed archer. Not embarrassed to admit it either. He put me in my place. One of the most disciplined archers I ever competed against.

Story ,the Olympic champion pistol shooter won a gold medal shooting right handed,an accident blew is right hand off,so he practiced left handed pistol shooting and again won the next Olympic Gold metal in pistol shooting.....I think this was in the early to mid 1950 and he was from Checknovaseca..dammm so sorry I slaughtered that word....

I would make sure whatever you get is Light weight,easy to load and would get help with a "sling" to make the air gun easier to use.

Use a Sling,it can act as another support,remember a sling is your friend.
 
NEVER give in to a disability! My wife had a stroke at 29 and was being fed through a tube for 2 weeks. All she could do is blink. She fought her way back only to have 2 more strokes that put her back in a wheelchair. Fast forward 30 years and she walks 1 1/2 miles everyday and although tiring, she goes about her daily routines. 

I don't know your budget, but there are tripods that will support the gun and allow you to step back for a rest without removing it. A semi auto gun may be worth looking into also.

tell your wife that I admire her chutzpah ! I was a pilot , flying private jets for the Shekhs and Shahs in Arabia , came home to visit my parents , two days later , I had a massive stroke ....in a coma 3 days , on a ventilator , the docs informed my parents that I was brain dead , they "pulled the proverbial plug" , and I died , and was resussitated . ....I was 47 ....

I couldn't walk or talk .....after a year in rehab , I can walk and talk (my I.Q. suffered) .....I was never a genus anyhow .....but , I'm glad it happened , here's why .....14 years have gone by ......

the Lord gave me 7 MAJOR VISIONS of the future , and especially the Second Coming .......Heaven and hell , are REAL .........I know this ! .......... I can talk the talk , because , I've seen the other side .....it's where we ALL , are going to spend eternity .........get to know the Lord , before it's too late .....

tell your wife that I also , was "ourfitted " , with a "feeding tube" . ....once in a while just for kicks , the nurse would let me "feed myself via the "tube" ....pretty hard core ! yes ?

I'll say the one more time , but THESE are the End Times ......please , get to know the Lord , before it's too late ! it takes a little more that just attended church now and again ...

the Bible says this , "that 2/3rd's of the total population on earth , (at the Second Coming) .. will NOT mail me to heaven .....that only leaves 1/3 , will make it ...not good odds !
