How do you go about mounting a bubble level to your scope? I square up the rifle and the scope with levels then I match up the bubble level. Is that a good method to be in sync?

Soquare it to your rifle rings and some people say top of scope turret but what if that's canted? Use at least 2 levels. One across your half scope ring mounted to the gun as your guide and another on the scope rail itself. If you don't want to remove your scope then just use MUCH LOWER rings with a bubble level on it. Dovetail or Picatinny bubble levels just mount to factory rails but you need to shim them if they don't match your 2 CONSTANT bubble levels.

Or, level the gun, then line the scope reticle on a vertical line, like the corner of a straight building (no leaners). Poor mans trick but does work

The scope level is used to indicate when you are holding the reticle vertical, so the reticle is what you line it up with. First, line up the reticle with a plumb-bob or some other vertical line down range. Rotate the scope level on the scope tube until it indicates level, and then lock it to the scope tube.
