Releasing pressure on a Co2 gun?

Shoot it down. That way no orings are frozen solid. Let it sit there until it reaches room temp. In my opinion that's the safe way.

On standard 12 gram cartridge type guns (as in I have NO experience with bulk fill cylinders) I have always unscrewed whatever I had screwed in when the cart was fresh until the gas starts escaping. Let the cart drain fully before fully unscrewing the, again, previously screwed bit all the way out to remove the now chilly empty.
