All the above look great! Can't go wrong with bacon wrap. I also like to brush with olive oil, a little salt and pepper and grill on a slow fire.

A lot of wild game is like that, very easy to over cook and ruined when you do. Think dove is bad try some over cooked goose! John: next time leave the breast bone in. The marrow, tendons and connective tissue has more and better flavor than just the meat by its self. Any time you fry what ever with a egg dip. First flour the meat then dip and re flour. Breading will stick to meat much better. When you egg first most of your breading will stay in the pan.

I find that dove breast takes very much like dark meat turkey. Have turned dove breast into stroganoff several times, the family loved it over egg noodles.
