So,just as there is more than one way to skin a cat,so it goes for rabbits.
BitFrost, I'm not sure I would use your hanging method on a 40 degree Australian day. It would probably be cooked by the sun.

A cool basement? Best temperatures are around 6 degrees celcius.. You risk cooking it, and I risk freezing it. 40cm snow in the mountains last weekend on my huntingtrip
