I think dovetail/picatinny rail also is a bit of an cultural differences between USA and Europe.
Most of the airgun manufacturers in Europes default option is dovetail. I have actually heard that some swedes said that they would not buy Bobcat or Wildcat guns because they have a "tactical" look with it's black composite stock, pistol grip, rail and so on.
In my opinion, use what works for you and what you enjoy

That said I will switch out the dovetail on my Waildcat, and it will be the first time I will be using picatinny for a scope mount.
About the pellet fussiness, I can not agree. My Wildcat gladly eats JSB Jumbo and Jumbo Heavy, as well as FX on in 5,52 mm and Preditor Pollymag Short as well. I have Steyr Hunting in .177 that only works well with AirArms Field 4,51 and nothing else.
on the other hand I hade a CZ 200T in .177 that ate almost anything.
For me the FX ST barrel works fine, and since the JSB brand is a common brand in Sweden I have no problems getting the best out of gun.
