@Chris1973 For safety reasons, it is best to get a little longer set screw rather than getting a shorter one. Then just drill the hole in the probe deep enough to match the finished length. What would be ideal for safety would be to drill and tap that block most of the way through, and drill the probe all the way through. Then the only way for failure is if the set screw failed in two spots, which is highly unlikely. 

As far as material goes, the black annodized screws you describe could be hardened steel. The box or area they are sold in should be labeled what they are in that regards. If they are hardened, there is not much difference between them and stainless regarding performance in this application, as stainless steel is a harder alloy of steel. You don't have to worry about the stainless rusting and seizing in place, and it is harder than plain annodized steel.
 
Not asking how did you managed to strip the thread but a 3mm setscrew shall be enough for the load there. Me personally would re-thread again for 3mm but for thread inserts.

The strength of the thread over this wire coils is always longer lasting vs increasing a thread size especially if we talking any softer materials like aluminum or even mild steel.

It is all about increasing the sheer strength of the set screw though increasing diameter of said screw, not about repairing the threads. When the original 3mm screw sheers off in failure the probe shoots backwards, and penetrates into the shooter's shoulder, or worse This is why all Impact's now come with 4mm set screws.

Airgun hobbyist I was thinking for a thread all over the probe or thread from both sizes but I hesitated because I thought by this way could make the probe more weak. 

Bighun the link you have post seems same with this one that post Edosan today in another topic . 
When I am opening the link everything is written in Arabic language and I can’t read anything about specifications of the product .I can imagine is something like more flexible material than a normal thread screw made by coils ? And you insert it inside the hole with this red tool I can see in the picture? Does this need thread with traditional tap before you install it ? Or you can just use it in a simple hole which is made by drill? 
 
Anyone know the spec's so I can order a new one, my old one is stripped, the one in my other impact is too small.

I ordered the two older styles from Bang&Kirk one is too long the other is too narrow.
