.357 caliber is pretty sweet for the critters on your list that are legal for you. You can push them up around 275 to 300 FPE, which is plenty. This caliber will use less air than the higher calibers as well, plus will get on target a little quicker in airguns.

I'd think the texan 30 Cal would be a fantastic middle of the road general purpose caliber! 

Get a couple of molds to cast and a 357 Cal might be workable too I'd think, though fewer shots per fill if that matters.

I used my Texan .50 for deer the first time during Alabama airgun season. 388 grain @ 202yrd no tracking required! so yes for bigger game it's great.
