Ballistics gel info needed

I'm not sure what you mean by "gel rate". I think most of us test in 10% gel (10% by weight) because it is kind of a standard test medium, not because it closely simulates any animal. Animals are not consistent in resistance to penetration. Muscle tissue is more dense and bones even more dense than that. It's not easy to get that much gelatin to dissolve in water either. It would be even harder to get it dissolved if you tried to go higher.

Ballistic gel is meant to give us a baseline for penetration and projectile effectiveness. It's not easily transferable to live animals.
I have seen some creative test trying to approximate projectile effectiveness on different species.
Some have added hair and skin, some have added feathers and even molded bones into the gel.
It makes for interesting videos and a lot of supposition on the viewers part as well and the presenters part.
Overall your customer base will likely be educated and experienced shooters\hunters and will make their own conclusions based on personal experience.
That being said, by all means, make some good videos, we all enjoy them.
