The time an animal has to responded to the sound of an approaching pellet isn't much in the cases where the velocity close enough to the speed of sound and the target isn't too far away.

e.g. if the target is 100 yard away and the pellets velocity at the target is 600 fps. For simplicity using the absurd assumption that the pellet is going 600 fps from muzzle to target, it takes 0.5 seconds to reach the target. Assuming speed of sound is 1100 fps it takes the muzzle noise 0.27 seconds to reach the target, so the crow as only 0.23 seconds to respond to the muzzle noise. Let's say the bird can hear the pellet noise from 50 yards out then the time it has to react is 150/600-150/1100=0.11 secs to respond.

I would say it is likely the crow saw the pellet unless by small chance decided to move before the pellet arrived. People lined up behind my gun can see 0.25 pellets at 880 fps and birds have much better eyesight than humans.
