Good work, sir.  Cook the meat on low heat and keep it moist.  I like to use bacon wrap to keep it juicy.  Add some green Chile and garlic salt… 

 

Enjoy the fruit of your labor.  Watch for bugs and off color.  If in doubt, toss it out.
