I made mine with the "Rugged Buddy" folding sawhorse legs and a 24"x48" 3/4" birch plywood panel.

Super solid and comes in at 27 lbs. Probably would be lighter but I added the deck board lengthwise for extra support.

Basic tools, skills and a bit of stain.

Turned out great and very stable. Hope my pics are showing up.

Keep in mind, I'm shooting off of a concrete patio down across my backyard. I use a 3 leg, folding hiking chair and at 5'9", it's perfect for me. If you're setting up on uneven ground, 

a 3 leg table with adjustable legs will be more suitable. If I was looking for something to hump around the woods while hunting, I'd go super light weight like this:
