Don't shoot too fast in between shots with the dual reg Maverick. The second regulator takes some extra time to fully fill the plenum.

Mine shows a straight line with zero windspeed selected even with the gyro effect maxed out at +5. It shows an "S" curve like yours only if I select the wind profile as "wpro" which has the wind switching from side to side.
