Opening morning for primitive weapons in GA success

Yep and made some absolute bangin chili yesterday/this morning. Cut up the brisket and one of the hams in to about 1" chunks. Fried up a pound of bacon, then fried the chunks in the bacon fat. Sauteed a whole red onion. Diced up 2 large jalapenos. 8 serranos, 1 poblano, 2 bell peppers, and 10 smallish on the vine tomatoes. Threw the venison, bacon, onions, about 1/3 cup minced garlic, and all the diced veggies in the crockpot along with 2 cartons of stock, and a couple tablespoons each of cayenne and 6 chili powder. Started it at 1:30p, ran it on high till 9:00p then turned it on low and set the lid slightly ajar so it would thicken up. I got up at 3:00 this am to check on it and it was done. It probably wouldn't have hurt it if I had just got up at my normal 6:00. Ended up with a little over a gallon of chili.
 
The heart, yes. When I was a young man, my Dad and I would go camp hunting in W. VA. After we took the first deer of the hunt breakfast was fried heart and scrambled eggs. Good stuff. Never ate the liver but google says: rich in vitamins and minerals, including thiamine, manganese, vitamin A, vitamin C, riboflavin, niacin, vitamin B6, folate, vitamin B12, pantothenic acid, iron, phosphorus, zinc, copper, and selenium.
 
I ran out of wall space , 10 pts and one 8 but I just kill for meat now. The other day I had a doe pass me than a few seconds later a high cow spike really a 3pt came 10 ft from me it never knew I was there but I let it pass. 50 yards from my back patio but I was in the woods. I hear there’s a 8 pt in these woods. I want to see him. I may pass also.
My trophies are in my head. Can't prove I passed on them but surely did pass on some of the best I've ever seen. Totally understand your philosophy. Dad took enough beautiful mounts for both of us. He's been gone thirty years now. Miss him during hunting season. Well done.

Congrats on the successful hunt, but you left the best part in the deer, the heart. Also the liver is good and good for you. Personally for the little extra time I just quickly cut the meat out of the ribs but I gut so it's not a lot of extra effort even though it's not much meat. I also "recycle" the carcass, the dogs get first crack for a day then it gets dumped for the wild scavengers.

You are right about spikes being some of the best eating. I get tired of hearing people claim they hunt for the meat but they only ever shoot a buck after passing on many doe and spikes. Personally I'll readily admit to being a bit of a horn hunter. I take lots of spike and a few doe, but if I shoot a buck I shoot the biggest one I can, assuming he's mature. For some reason the meat taste a little better when you are looking at a head on the wall while devouring your preys flesh. Lol.

I’ve killed tons of bucks …. And guided others to a successful trophy….. from Mass. ,Colorado, to the swamps of Louisiana….. where I chased a 18pt buck for 3 years. ( seasons ) With a bow he would run 45-50 yards from my stand, black powder he passed 100 yds tru thicket …. I never had a for sure kill shot … it would take me get up at 1:00am. Take a flat boat, transfer to a conoe and getting to my tree stand at 5:00am. I’d watch tons of deer pass. 6 pts , 8pts but I wanted that one old 18 pt. He always ran with a ten …. Which I past on many times.
The last I know he’s still deep in that swamp and he’s the king of that area

As a young person we were made to eat liver….. I still hate liver. Yet I eat duck patty at a fancy restaurants lol. I once was asked to save the genitals for a viet restaurant owner. I killed three bucks that year and traded those penises for free meals at his restaurant…… I tru in a hind quarter with those ….. he later asked me why I gave the whole hind quarter….. he only wanted the penises. Lol. He would make soup from those for him and his buddies. Yum lol

To me that's what makes for some of the best hunting. You had a goal with a particular "competitor" if you had managed to get a shot it would have been that much sweeter. As is you still learned a lot and had experiences. Stuff like this is why I can't get on the "trophy hunting is bad" bandwagon. I've made more good ecological decisions, like passing young bucks, in pursuit of a "trophy". Ive spent a lot of time and money trying to improve hunting areas, which benefits all the deer and game, just trying to draw big bucks out. I've never had a shot at an 18 pt though, never even seen one on my game cams. That's a heck of a deer, hopefully he has a few juniors running around helping spread those genes.

I sometimes think stuff like that is weird, then I remember country people eat bull balls, and realize weird is probably just a matter of what you grew up with. Apparently some people think eating a deer is gross.

I never used game cams, just get to the heart of an area and look for runs ( brush the leaves aside and tracks leading both directions ….. pick the down wind side one tree on either side of the trail in case the wind switches direction. Simple.

I don't always use cams. That's similar to how I hunt pigs, and/or new or big properties. I'm in Texas so it's a lot of smallish private land, with feeders. One property I hunt is less than 10 acres, on it especially I like cams because it allows me to know what the deer are doing. It's really easy to mess up small acreage with a simple mistake. All it takes is one slip up and that big buck may not come back the rest of the season. I also like them for managing what deer are there, a little better. It allows for a more educated decision on what to take and what to leave. If you have 50 doe and 5 bucks on cam you know it's time to fill the freezer. If you have 5 doe and one buck you might want to hold off a year or two and harvest somewhere else. It also helps feed the fever pre season when you are counting down the days to opening morning. To me it's like a range finder or binos, just one more tool that sometimes helps me do the job a little better.

beef is the worst of all kidneys , deer kidneys -especially fallow deer, dont know if u get them in the states are like mushroom on steroids with truffles
Fallow have been brought over. Mostly on high fenced places. They aren't rare, but aren't all over the place either. I actually know a guy hunting them on a low fenced place this weekend. My account is new so I still can't pm for some reason, idkif you can pm me first or if I just can't pm at all

Orientals will eat anything that may give them a little extra rigidity.
 
Also in Georgia and just got a .30 Maverick for the same purpose. Kind of silly we are not allowed to hunt deer with a .22 the same way , but the air guns are legal. but I’m glad we are. I have been hesitant to post about hunting deer this way because I know many who have not spent enough time behind a scope that are used to center fires will say headshots are not ethical because of the small margins of error, but as long as you know what you and you gun are capable of I think you could easily harvest I higher percentage of deer than people who hunt with typicall centerfire cartridges.
 
Ribs, wash, salt and pepper cook right away don't take long. Cut meat off of bones grind up fine. Add mayo or whatever, makes killer sandwich spread. Heart and tenderloin good to eat soon as hits the ground, ribs too but the rest will be much better if you age it before freezing or eating. Never heard of eating kidneys or testicle? Deer makes really good jerky. But yeah fallow is the best venison there is. Knife looks like havel's change out blade. They use to make one that fit a standard scalpel blade. But got smart and now they only fit their over priced specialty scalpel blades. I have the original and can buy 100 blades cheaper than they charge for 5 or 6 of the new ones.
