Just finished installing Huma reg in Marauder. When filled with air, gauge will only go to 2000, gauge on bottle shows 3000. What's up with that?

If I had to guess, the gun does have 3000 psi in it, due to the reading on the bottles gauge.
The gun gauge is reading 2000 (or thereabouts, those cheap gauges aren't known for their accuracy),
which would be correct, because now that a regulator has been installed, you are now reading the regulated pressure of the regulator. This is normal.

your gage now reads the plenum pressure , it reads the pressure below the tank ! thats the little pocket of air that is now regulated , once your gun is tuned see how many shots you get before the reg starts to drop off now its time to fill , shot count should stay there
